The Salad You Were Wanting to Eat

Ready ? This is a 1, 2, 3 step easy salad, healthy, fills you up plus speeds up your metabolism.
I can hear you TOTALLY: You are busy, there are days you are not prepared.

This is the Salad YOU were waiting for 🙂

Perfect Bean and Vegetable Salad

Salad 1

1. One can of black eye beans washed and drained. Use just half of the can, the other half keep it on a container in the refrigerator for later.
¼ cup Buckwheat cooked. Follow package instructions to cook. Or you can use Brown Rice.

TIP: On the days you cook make 1 or 2 cups of either: Buckwheat or Brown Rice by following package instructions. Let them cool and separate them in freezer bags by portions. Keep them handy.

2. ½ carrot sliced
½ zucchini sliced
¼ red medium onion sliced
¼ yellow pepper sliced (you may use the color of your choice)
¼ teaspoon Coconut oil
In a pan, heat the coconut oil in medium heat and grilled the vegetables

3. Wash some lettuce or any Baby Greens of your choice;  add ½ small hash avocado.

Salad 2

OPTIONAL: you may add Grilled Chicken Breast, Fish, Tuna, or cooked Ground Turkey.

  • Mix the Buckwheat or Brown Rice, the Beans, the Grilled Vegetables over the lettuce and the Avocado.
  • Season it with sesame seeds, cilantro, rice vinegar, salt and pepper and a dash of red pepper (optional).

Sit comfortably, relax and take your time to enjoy your food, chew it slowly and let it nourish you.
